Description: A perennial plant that grows best in a hot, sunny climate, Tarragon has been called the "King of Herbs." Tarragon grows in bushes and its narrow, pointed, dark green leaves produce a strong, unmistakable, licorice-like flavor.

Culinary Uses: Tarragon is one of the four "fines herbes" of French cooking (along with Parsley, Chervil and Chives). Among its wide variety of seasoning uses are in chicken, lasagna, fish, egg dishes and salad dressings. Tarragon is a key ingredient of Béarnaise sauce, a French creation often served with grilled meats. Sprigs of tarragon are frequently used to infuse oils and vinegars with its distinctive flavor.
